Trick or treat with cake pops! Thanks to the delightful and amazing creations at Bakerella and other creative cooks, we have decided to make them for Halloween. While our daring attempt to make the cake pops did not achieve as smooth texture as the talented confectionary artists, it tasted pretty darn good!
Here's how to do it yourself. Start by baking a chocolate cake. Any yummy chocolate cake. Most recipes call for a boxed cake mix, but scratch homemade recipe works as well. Bake the cake and let it cool completely on a rack.When it is completely cool, break the cake into a large bowl. We crumbled ours with our fingers and a spoon.
In a separate bowl, beat the 200 gms softened cream cheese, 100 gms butter and 1 teaspoon of pure vanilla extract together. Gradually add in the 200 gms icing sugar and mix until light and fluffy. Scoup 2-3 spoonful of frosting mixture into the cake crumble and mix. Check to see if it will roll into a ball. It should be very malleable, easy-to-handle cake mixture. But if it needs a little extra moisture, add in another scoup of the cream frosting. We have only used about 1/2 of the portion into the cake crumbs, you may need more or less depending on the amount of your cake.
When the mix is ready, take a bit of the cake mixture and roll it into a smooth ball. Place it on a non stick pan / baking paper and repeat until you've used up all the mixture. As each pan/sheet fills up, refrigerate over a plastic wrap. We drew out a few characters while waiting for it to firm /harden.
We had left the cake balls in the fridge for about 2hours before taking them out to decorate.
Melt some chocolate or white chocolate for the coating. We had added a little oil based food coloring for the colors. Stir the melted chocolate well. Place a stick on the cake ball before dipping /covering it into the melted chocolate. At this point, stick the other decoration on the cake pop before it hardens.
Lastly, don't refrigerate the cake pops as it will cause the coating to weep or melt.
